How can I cut a specific amount from store owner's eraning??

Is it possible to cut a specific amount from store owner's earnings??....bcoz while running the delivery service , I am facing lots of scenarios where I found that it could be easy if i could cut some amount from store owners earnings as a admin..
like this scenario which every day happens, a customer orders multiple items and 1-2 items aren't available..so if we call the customer they ask refund for specific item. and we have to note it down always bcoz while doing payouts store owner expects the total payout amount ..

SahilBhusane use call and order module. When few items are not available cancel on behalf of customer and place a new order from their account. This will solve the issue.
