If a store has enabled open/close scheduling and if the store owner clicks the open/close toggle button on the Store Partner app, it popups a clear confirmation message that if you proceed, the store scheduling will be disabled.
Still if your stores are not clicking "No" button then try hiding with custom css, or educate your store owners.
